Yes, you can record in stereo. First, let's get our terms straight. Recording in stereo is a simple (?) matter of setting your PS-02 to record to tracks 2 & 3 before recording. Your input could be a stereo input going into the AuxIn or a mono source (internal or external mic) going through a stereo effect (like "Wide" or stereo delay). So the input is stereo (or mono through stereo effects) and the recording is stereo (to tracks 2 & 3). Now that you're totally confused, here comes JMS to clear things up.

Both the internal mic and the INPUT (which are MONO) may have the processed output (using internal effects) stereo signals recorded on 2&3

Guitar effects out are (at times) <STEREO>. Like the Ping-Pong echo. The input is MONO, but the effects processor outputs stereo.
Can you record the STEREO processed sound?
Yes.

You will need to record to tracks 2&3.
You will need to set the Pan for them both to left and right, either before or after you finish recording.
You will need to use the IN(put) as source.

The PS-02 Manual wrote:
If you select "AU" ([AUX IN] jack) or "Ai" ([INPUT] jack + [AUX IN] jack) as recording source, and select "23" as recording track, recording is carried out in stereo on tracks 2/3.
During stereo recording, track 1 cannot be monitored.
